Monday --- Salsa Chicken & Black Bean Soup

Hi there, Slow Cookerers.

Here is an "oldie but goodie" recipe ---- I try to make a variation of this once a month or so --- it's a great way to use up the bit of salsa and veggies you've got hanging out in the fridge and it's an awfully forgiving recipe.

it also smells delicious while it cooks ---

which means if you work from home you are beginning to eat dinner at about 4 o'clock because no one can wait any longer than that to eat!

I re-made Salsa Chicken and Black Bean Soup last week for dinner.

I followed my own recipe, but decided to not stir in the sour cream at the very end, but instead added a dollop to the bowls at the table.

We only had a touch of sour cream left in the house -- so this was a good compromise.

And it was delicious -- and the bit of sour cream in the bowl provided the same effect --

My kids are much older than when I first made this soup, so putting mushrooms in the soup is okay -- no one makes gagging noises or starts talking about fungus at the table.

This is a good thing, probably.

But I've got to admit that I sort of miss the younger years when I needed to persuade and cajole and barter with the kids to try new things.

huh.

now it's 5:24 and I feel weepy!

If you are in the mood for a super easy and delicious dinner that makes enough that you can get away with not cooking tomorrow, then I highly recommend this soup.

I used canned beans last night, by the way.
