Happy Wednesday, Slow Cookerers!!
I can't help it.
I love having a fully stocked fridge, pantry, and freezer.
It's super comforting to know that there is always enough stuff in the house for last minute company or a house of hungry kids even if I haven't been able to get
to the grocery store in over a week or so.
I want to share one of the best meal-planning "secrets" out there ---
COOK IN BULK.
Many of you write to me and share that you are only cooking for 1 or 2 people, so you simply make the recipe as-is, and then freeze the leftovers to eat again later in the month.
It's wonderful! I love it!
Chances are your family is just fine eating tacos, etc. twice (or even three times!) in a month.
I get it that "leftovers" doesn't sound very exciting but REPURPOSED leftovers are amazing.
