Herb, the Catifsh
Published: Thu, 06/07/18
Hello there, Slow Cookerers!!
I hope you enjoyed your week!
Today my middle daughter graduates from 8th grade. This means that I am not cooking tonight, because she has requested PF Chang's.
:-)
BUT. The rest of you might not have an 8th grader graduating today and so you're going to need to figure out dinner.
:-)
Summer is right around the corner which means it's time to transition from super heavy foods to something a bit lighter and fresher.
Here is one of our favorite Catfish Recipes.
We call it Herb. ;-)
Herb, the Catfish
page 159 More Make it Fast, Cook it Slow
serves 4
parchment paper or foil
4 catfish fillets
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried dill
2 lemons (1 juiced, 1 sliced in rings)
The Directions.
Use a 6-quart slow cooker. Lay a length of foil or parchment paper out onto your kitchen countertop and place fish fillets in the center.
Sprinkle the spices directly onto the fish, and squeeze the juice of 1 lemon all over.
Lay the lemon slices on the fish, fold the foil or paper over, and crimp the edges to form the packet. Place the packet into the bottom of your slow cooker (do not add water).
Cover and cook on high for 2 hours, or until the fish flakes easily with a fork.
The Verdict.
I was on the phone when my (then) 8-year-old daughter asked me what we were having for dinner. I wrote "herb catfish" on the kitchen chalkboard, and she took off running through the house to inform her younger sister that we were going to eat a catfish named Herb.
(PS, Herb was delicious!) :-)
Before I started using my slow cooker every day, I had the thought that there was NO WAY I could cook fish in the crockpot. The good news is, that I was completely wrong and have since blown that notion out of the water (ha!).

PPS:
My wonderful, wonderful site designer made the website even easier to use/navigate by installing a super cool way to print.
At the top and bottom of each recipe, you will see a Green Printer.
(that link also takes you to the world's best Parmesan Tilapia recipe...)
When you click on the green printer, you can toggle it to get rid of all photos and also delete the extraneous text.
You can also save the recipe as a PDF to your computer or phone, if you wanted to.
YAY! Thank you to all who wrote in and asked for this feature to be more user friendly!
