Hello there, Slow Cookerers!
I want to share my favorite way to make meatloaf with you today.
I LOVE meatloaf -- it's pure comfort food, and it's a great way to "hide" veggies in food if that's something that you like to do.
You can easily make this with ground turkey or chicken if you don't like using beef.
Each and every time I make meatloaf I change things a bit, and I honestly don't really measure anymore.
If you have a family favorite recipe then you by all means should use it!
This is how I USUALLY make my meatloaf:

Slow Cooker Meatloaf
serves roughly 4 people
1 pound lean ground beef or turkey
1 large egg
1 teaspoon garlic powder
1/2 tablespoon Italian Seasoning
1 tablespoon A-1 steak sauce
1 tablespoon dry onion flakes
1/4 cup ketchup (to add to top)
Use a 6-quart slow cooker with a loaf pan inside.
I've gotten a few emails from readers who ask where I've gotten my loaf pans that fit inside.
I don't know. Target?
I regularly use the Hamilton Beach Set and Forget or a Ninja, and both fit loaf pans easily. If you are really having trouble fitting a loaf pan, you can plop the meat directly into the bottom of your crock like a large meatball.
Or, take your crockpot insert with you on a fieldtrip to Target or Walmart and test out the loafpans they have for sale! :-)
Back to the directions ---- in a large mixing bowl, combine all the ingredients except for the ketchup.
I use my hands, but you can use a large spoon if you'd prefer. Press this meat mixture into your loaf pan, and then squirt the ketchup over the top.
Place the loaf pan into your slow cooker.
Do not add water.
Cover, and cook on low for 6 to 8 hours, or on high for about 3.5 hours.
If desired, use paper towels to blot away any bubbled up fat or grease.
Let sit in the pan for about 15 minutes before slicing and serving.
The Verdict.
This is a very low-carb meatloaf.
I have not been adding filler like bread crumbs or rice these past few years -- if you are trying to feed more people or do want to add in some filler, go for it! (about 1/4 cup).
I like how moist and juicy this is and I also like how easy it is to throw together.
If you'd like, you can certainly nestle a few sweet or regular potatoes down near the base of the loaf pan for a complete meal.
