Happy Friday, Slow Cookerers!
It is BARBECUE season!
*finally*! The kid are all out of school for the summer and I couldn't possibly be happier to have them home with me.
(except for when they fight. and make messes. and finish the cereal and then don't throw the box away so you don't buy more Rice Chex, because when you look in the pantry you see the box sitting there, so you think to yourself: oh, wait, we don't need cereal, we already have an ENTIRE box.)
ahem.

ANYWAY, we have an exciting day full of dentist appointments and cleaning out the closets.

Country Style Barbecued Ribs
serves 4
4 pounds country-style pork ribs
1/2 cup dark brown sugar
2 tablespoons soy sauce (I use gluten free)
1 tablespoon ground cumin
1 tablespoon smoked paprika
The Directions.
Use a 6-quart slow cooker.
Spread out a length of aluminum foil or parchment paper out onto your kitchen countertop.
Place the ribs into the center.
In a small mixing bowl, combine the sauce ingredients, and then smear evenly over all sides of the ribs.
The mixture will be more paste-like then saucey.
Fold over the parchment paper or foil and crimp the sides to make a fully enclosed packet.
Place this packet inside of a dry slow cooker. Do not add water.
Cover and cook on low for 8 hours, or on high for about 4 to 5 hours.
Carefully open the packet -- the steam will shoot out and will be super hot!
Serve with baked or mashed potatoes.
The Verdict.
Insulating the ribs within a sealed packet creates a steamy environment for the meat to tenderize perfectly and fall from the bone easily.
The meat is seasoned perfectly with the rub/paste, but if you'd prefer, you can add a bit of barbecue sauce at the table.
