Life is super wonky right now and I wish I had a magic wand to make it all better for everyone, everywhere.

I'm not very good with uncertainty and being out of control -- so I've found that the best way to challenge my nervous energy is to cook.
And since Cinco de Mayo is tomorrow and I have all the stuff in the house, I'm going to make Tortilla Soup.
Tortilla soup is a fantastic way to get your Mexican Food fix without lots of added fat, calories, or grease.
(this way you have more room for Margaritas!! 🍸)
I have two different options for you today --
one with chicken and one without.
