35 Slow Cooker Take Out Fake Out Recipes

I'm exhausted. You're exhausted.

I know.

(this is where I'm supposed to insert something witty and upbeat. I've got nothing.)

Except, I am happy you are here, and are reading this.

If you are in a lockdown type situation, and need some new food ideas --- I wanted to remind you that
while you COULD order take-out, you can also re-created your take out favorites at home, from scratch, if you wanted to.


It's Friday.
I want Chinese Food.

(and beer. is it okay to admit that outloud?)

Because we have allergies, it's not really all that simple to just pick up the phone and order take-out online.
It used to bother me that it was difficult, but now that I know how to make what we are craving at home, it's just a no-brainer to
skip the restaurant delivery and make whatever it is we want at home without the additional fat, sodium, grease, or gluten.


Tonight we're going to have a Take Out Fake Out classic:

  
Chinese Lemon Chicken.

Here is the recipe, if you'd like to join us.

The Ingredients:

4 boneless, skinless chicken breast pieces or equivalent
1/2 cup flour (I use a gluten free all purpose)
1 teaspoon kosher salt
6 ounces(1/2 can) frozen lemonade concentrate, thawed
3 tablespoons brown sugar
1 teaspoon balsamic vinegar
3 tablespoons ketchup
1/2 tablespoon or so olive oil for browning chicken. 


The Directions:

--cut chicken into strips or largish chunks

--dredge in flour and salt, shake off excess

--brown chicken in a skillet with a bit of olive oil (you are not trying to cook the chicken--just give it some color and get the flour mixture to stick a bit)

--place into crockpot -- a 4-quart is probably the best size or put a piece of corningware or pyrex into a large slow cooker so your chicken doesn't get lost in such a big pot.

--mix the rest of the ingredients in a separate bowl and pour over the top of chicken pieces

--cover and cook on high for 4 hours, low for 6-8

Serve over rice, drizzle with remaining sauce.

This tastes amazing all on it's own, but next time I might add a bit of red pepper flakes to the grown-up portions for a bit of a kick.
