Dinner tonight is going to be pretty easy because we've got a Birthday dinner planned on Wednesday (of tacos. my kids always want tacos on their birthdays. ;-) )
and I want to sort of clear out all of the tupperwares and various odds and ends of the freezer so I can grocery shop properly for her birthday.
This means:
Garbage Soup.
It might sound gross --- but it's really just a hodge podge of minestrone.

This is what I'm going to do:
2 smoked sausage, diced (we have Chicken and Apple Aidells)
1 chicken breast, diced
about 1 cup leftover Mongolian Beef
cooked Rotini Pasta (about 1 cup)
1/2 cup chopped carrot
1/2 cup chopped onion
1/4 cup chopped celery
1 cup or so leftover O'Brien Potatoes
4 cups chicken broth
1 can black beans, rinsed
1 (15-ounce) can diced tomatoes
Cook on Low for while I'm at work --- about 8 hours.
And this is how I am going to "get away" with not cooking tonight!
