Happy Wednesday, Slow Cookerers!!
what's for dinner tonight?
we are going to be having 16 bean soup ---
I make this soup a bit different each time I cook it, depending on what leftovers I have in the fridge and my mood.
In a nutshell -- I pre-boil the beans and then let them soak for an hour in the hot water.
then I dump, rinse, and add to the crockpot 8 cups of water or broth, leftover veggies I have in the house, an onion or some onion flakes, and if we have cooked meat or some smoked sausage or a ham bone I toss that in.

but you can honestly mix and match however you'd like.
when the grocery stores started going haywire here at the beginnings of the lockdown(s) -- I brought home an awful lot of dry beans.
We ate a lot of bean soup in the early spring months of 2020 -- but haven't had any in quite a while.
the first rain storm in a VERY LONG TIME has hit the SF Bay Area (drive safely, people! SLOW down! geesh!!)
and so today I am making 16 bean soup. It's 4:30am while I'm typing this -- so my beans are sitting in water that I used to pre-boil them.
Pre-boiling is easy and releases a ton of gas (fun! and also a bit gross!) and also softens the beans nicely. If you are ever cooking with red beans you need to pre-boil to kill off a naturally-occurring potential toxin (more fun!) --
our local grocery store is also now stocking a gluten free cheddar biscuit mix that is supposedly similar to the biscuits served at Red Lobster.
We don't eat in Red Lobster -- so I don't know how legit they are, but the kids LOVE them.
The most dreaded phrase at the end of a long and busy day is, "what's for dinner?"
