Cooking Fish Perfectly Each Time

I was on the radio this past week -- in Indiana. I don't remember the name of the station but the guy's name was Ron and he was very nice.
I'm asked the same crockpot questions over and over so sometimes I feel like my interviews are sort of boring because I can anticipate the questions before they are asked.
The interviewer (the one who asks the questions ---- that's the right term, but it looks funny and spell check is giving it a red line...)
always asks what I can make in the slow cooker that people are surprised by.
I have a lot of answers -- I've pretty much tried to make everything I can think of (at least once) but the one that surprises
the "foodie" crowd the most is Fish.
You can make perfectly moist and flaky fish in the crockpot.
This is our favorite recipe:
Parmesan Tilapia
serves 4
aluminum foil
4 fillets of Tilapia (or other favorite white fish)
1/4 cup mayonnaise
1/2 cup shredded Parmesan cheese
juice of 2 lemons
4 chopped garlic cloves
1/8 teaspoon each of kosher salt and black pepper
for serving: more lemon wedges
The Directions
Tear 4 (1-foot or so) lengths of aluminum foil out and spread them on your kitchen countertop. Place a fish fillet into the center of each one.
In a small mixing bowl, combine the mayonnaise, parmesan cheese, lemon juice, garlic, salt, and pepper. Whisk together with a fork.
Smear this sauce evenly over the top of each piece of fish. Fold the foil over and crimp the sides to create a fully enclosed packet.
Place these packets into an empty 6-quart slow cooker. DO NOT ADD WATER.
Cover, and cook on High for 2 hours. Carefully check doneness by opening the foil packet (steam will shoot out, be careful!).
If the fish cuts easily with a fork and is flaky, it is done.
Serve with rice and your favorite vegetables.
Amaze your friends and neighbors by calling them and telling them that you just made fish in the crockpot and it was utterly amazing.
