Apricot Chicken -- a family favorite

Oliver the cat was "missing" last week. We couldn't find him from last Sunday until Friday night.
He's home now, safe and sound, and the working theory is that he somehow got trapped under a house in the neighborhood that is having some work done.
He's an outdoor cat. He and his "sister," Sugar, have been with us for about 4 years and they were rescue feral cats. They are cuddly with us but really can't stand being locked up.
So we let them out during the day and they come in at night.
I was pretty sure Oliver was a goner. I told the kids that I feared the worst but we would continue to hope for the best.
I didn't realize how stressed I was until he came home and I immediately felt the tension drain out of my shoulders.
Why am I sharing this? Because I've been babying Oliver.
I want him to stay closer to home, stay in the yard.
So last night when I made the family Apricot Chicken I saved him a portion.
He really liked it.

Apricot Chicken
serves 4
6 chicken thighs or equivalent body parts (approx 2 to 3 pounds)
1 (11 ounce) jar of apricot preserves
1 teaspoon dried minced onion flakes
1 tablespoon dijon mustard
1 tablespoon soy sauce (La Choy and Tamari wheat free are gluten free)
1/4 teaspoon ground ginger
1/4 to 1/2 teaspoon red chili flakes (optional)
The Directions.
Use a 4 or 6 quart slow cooker. Place the meat into your slow cooker -- I used frozen tenderloins this time but have successfully done this dish with thighs, breast halves, and even with pork chops.
It's a yummy sauce!!
In a small mixing bowl combine the rest of the ingredients to make a sauce and then pour it evenly over the top of the chicken.
Cover and cook on low for 6-8 hours, high for 4-6--if your chicken isn't frozen, your dinner will cook faster.
serve with white or brown rice and veggies.
The Verdict.
Kid tested, cat approved.
