Baked Sweet Potatoes in the CrockPot and a 7 year old birthday!

FRIDAY!!

Hi there, Slow-Cookerers!

I have a 7-year-old birthday girl in the house today. She woke up at 6:35 this morning and ran through the house chanting: it's my birthday, it's my birthday, it's my birthday!

My hope is that on your next birthday you follow suit and do the very same thing. ;-)

Many of you have been on my mailing list so long you remember when I was pregnant with this totally-awesome kid.

She has asked for a very specific dinner tonight, and I've got to admit I very well may not make it in the slow cooker.

Scandalous, I know!!

She's requested: chicken & apple sausage, barbecued baked beans (from a can. #sigh), and sweet potatoes.

I might throw the sweet potatoes into the crockpot, though, just because.

If you've never baked potatoes or sweet potatoes in your slow cooker, you should.

it's super easy.

Baked Sweet Potatoes
page 100, 5 Ingredients or Less Slow Cooker Cookbook
serves 6

6 large sweet potatoes, or yams, scrubbed

OPTIONAL:
6 tablespoons butter
3 tablespoons dark brown sugar
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg

Use a 6-quart slow cooker. Poke each sweet potato a few times with a large fork.

nestle the potatoes into your insert -- it's okay to stack them.

Cover and cook on low for 8 hours or on high for about 5 hours. The potatoes are finished when they are soft enough for a knife to insert easily and the skin has begun to pucker.

If the skin is too "wet" for your liking, take them out of the pot and place them on a layer of paper towels for 10 minutes or so before serving. 

Cut in half and serve with butter, sugar, cinnamon, and nutmeg. OR, just sprinkle with sea salt if you'd like. No worries -- it's all good!
