Howdy, Slow Cookerers!

It's St. Patrick's Day week! If you bought corned beef over the weekend and are unsure what to do with it -- HERE YOU GO.

I've gotten quite a few emails about spring sports season and the busy evenings and weekends that All Things Baseball and Softball bring.

I hear you.

I get it.

My suggestion is to cut yourself some slack and give yourself grace. Let's rethink the "family dinner."

It's just not practical sometimes to have everybody sit down together at 6pm at the dinner table.

And that is OKAY.

Keep your food hot and ready ---- so when your family is home in bits and spurts they can help themselves right out of the crock. 

Making hot sandwiches is a great way to feed a whole bunch of people in a simple and easy way and the food can stay on the "warm" setting for an extended period of time.

serves 8

(if you'd like to serve more, use a larger roast. Aim for about 1/2 pound per person)

3 to 4 pound beef rump roast
1 onion, sliced in rings
2 tablespoons dried oregano
2 tablespoons dried basil
1 teaspoon cayenne pepper
1 teaspoon kosher salt
1/2 teaspoon anise
1 (14.5-ounce) can whole tomatoes (undrained)
1 (12-ounce) bottle beer (Redbridge, by Anheuser Busch is gluten free)
8 hoagie rolls (I use gluten free bread)
8 slices of mozzarella cheese

The Directions.

Use a 6-quart slow cooker. Put the meat into your cooker (frozen is okay).

Top with sliced onion, and all the dried herbs and spices. It will seem like there are way too many herbs—try not to worry.


Add the entire can of tomatoes and bottle of beer. Cover and cook on low for 8 hours, or until meat shreds easily with two large forks.

Shred the meat completely, and stir well.

Serve on toasted rolls with melted mozzarella cheese, or you can use provolone if you are extra fancy!

The Verdict.

If you’d like more heat, sliced pickled jalapeño peppers works great as an additional sandwich topping. 

Sandwiches are a great way to make a piece of meat stretch a bit farther, or just as a "different" way to serve the same food.

If your family usually has a Spaghetti and Meatball night once a week, cook the meatballs in sauce in the slow cooker and then serve on toasted buns with a slice of cheese. 

It's essentially the "same" dinner, but with a different twist.

Sandwiches are also a fantastic way to use up last night's leftovers.
