Happy Wednesday, Slow Cookerers!!

I've told you many (many!) times before that I am a meal planner.

I can't help it. 

I love having a fully stocked fridge, pantry, and freezer. 

It's super comforting to know that there is always enough stuff in the house for last minute company or a house of hungry kids even if I haven't been able to get to the grocery store in over a week or so.

I want to share one of the best meal-planning "secrets" out there ---

COOK IN BULK.

Many of you write to me and share that you are only cooking for 1 or 2 people, so you simply make the recipe as-is, and then freeze the leftovers to eat again later in the month.

It's wonderful! I love it!

Chances are your family is just fine eating tacos, etc. twice (or even three times!) in a month.

I get it that "leftovers" doesn't sound very exciting but REPURPOSED leftovers are amazing.

This is one of my favorite ways to cook in bulk --- when chicken is on sale, bring it home, dump it in the pot, and then you've got shredded chicken in the house for sandwiches, tacos, salads, and to throw into pasta sauce.

BUT, it's still a completely and totally awesome way to utilize your slow cooker to it's full potential.

You can do this with whatever your favorite meat is ---

if you've got a hunter in the family, cook up a bunch of duck or venison, etc.
