Sweet Mustard Roast (beef or pork) Easy Recipe

I hope you enjoyed your weekend and are having a great start to the beginning of June!
I've got a great simple roast recipe for you today --
since it has a nice touch of sweetness to it, it's a great candidate to cook over the weekend, then slice thinly for salads or sandwiches during the week if the idea of eating a hot dinner is too much to wrap your brain around.

Sweet Mustard Roast
serves 4
3 pounds beef or pork roast (mine was still frozen when I put it in)
1/3 cup molasses
1/3 cup dijon mustard
1 teaspoon garlic powder
2 tablespoons white vinegar (apple cider vinegar would work well, too)
The Directions.
Use a 4 quart slow cooker for best results.
If you have a larger model, that's fine, but you won't need to cook it as long---I'd check after 5 hours on low.
Dump meat into cooker. Top with molasses, dijon, and vinegar.
Toss in the garlic powder. Using tongs, flip the meat over a few times to coat it nicely with the sauce.
Cover and cook on low for 6-8 hours or on high for about 4.
The meat will be more tender if you cook it on low for a longish time.
The Verdict.
This is a super simple recipe that will dazzle your family and friends when you serve dinner.
The vinegar really helps to tenderize the meat -- you can easily use a forgotten and frostbitten pork or beef roast for this one!
This is a great candidate for a Freezer Meal -- if you buy meat in bulk from Costco or Sam's Club, when you take the packages apart to freeze, toss in the sauce ingredients before you seal up the bag, then freeze.
The day before you'd like to slow cook, place the bag into the fridge overnight. In the morning, squeeze the contents of the bag into the slow cooker, set the timer, and walk away.
