Clean out the Pantry Chili Recipe

Hi there, Slow-Cookerers!

I hope you enjoyed your Halloween last night. 

Here's a recipe to soak up all that sugar and chances are you already have ALL the ingredients in the house!

Clean Out the Pantry Chili

serves 4 to 6

1 chopped yellow onion 
2 cloves chopped or minced garlic
2 (6-ounce) cans of tomato paste
3 (15-ounce) cans of beans, drained and rinsed YOUR CHOICE! (I used garbanzo, white kidney, black beans)
1 tablespoons Italian seasoning 
2 cups broth (I used chicken. vegetable would work great)

1 to 2 tablespoons (heaping) sliced jalapeños from a jar or can (optional) 
(NOTE: if feeding small children, add at the table --- it was too hot for my kids when cooked with the beans)

optional toppings: raw onion, shredded cheese, sour cream. 

The Directions. 

Use a 4 or 6 quart slow cooker. Chop up the onion and garlic and add them to the crockpot.

Open all the cans.

Rinse the beans and add to the pot along with the rest of the ingredients.

Cook on low for 8-10 hours. 

Serve with your favorite desired toppings.

The Verdict.

That's it for this recipe! You can most CERTAINLY doctor it up however you like.

This is my favorite way to use my slow cooker: to simply play and add things that are already lurking in my pantry/fridge.

If you like corn, add a can of drained corn or a handful of frozen corn. If you want to throw in chopped carrot or celery, go for it! I truly believe cooking should be fun and without too many rules.

If you've got leftover ground beef or potroast, throw it on in!
